Tomato And Chive Soup
- 2 Tbsp. butter or margarine
- 2 onions, chopped
- 2 carrots, chopped
- 2 leeks, chopped
- 2 cloves garlic, minced
- 1/2 tsp. curry powder
- 1/2 c. flour
- 2 (6 oz.) cans tomato paste
- 4 c. chicken broth
- 3 c. tomato juice
- 1/2 c. dry white wine
- salt and pepper
- 1/2 c. sour cream
- 2 tomatoes, chopped
- 1/4 c. snipped fresh chives
- Melt butter in heavy saucepan.
- Saute onions, carrots, leeks, garlic and curry powder over medium heat until vegetables are soft, but not brown.
- Stir
- in flour and tomato paste. Immediately reduce heat; stir in chicken broth, tomato juice, wine, salt and pepper to taste.
- Simmer slowly 1 hour.
- Strain soup if desired.
