Aunt Libby's Chocolate Pie Recipe
- 2 c. Boiling water
- 3/4 c. Sugar
- 3 Tbsp. Cornstarch
- 1/4 tsp Salt
- 3 Tbsp. Cocoa
- 1/4 c. Flour
- 2 x Egg yolks
- 1 Tbsp. Butter
- 1 tsp Vanilla
- 2 x Egg whites
- 1/4 tsp Cream of tartar
- 5 Tbsp. Sugar
- In small mixing bowl, put sugar, cornstarch, salt, cocoa, and flour, mix well.
- Slowly add in some of boiling water to dry sugar mix.
- Mix well till smooth.
- Add in this mix to rest of boiling water.
- Return to stove and cook till thick.
- Remove from stove.
- Pour a small amount of this mix over well beaten egg yolks.
- Add in egg mix to balance mix in pan and cook about 1 to 2 min.
- Remove from heat and add in butter and vanilla.
- Mix well.
- Pour into prepared baked pie shell.
- Meringue: Beat egg whites till foamy, add in salt and cream of tartar.
- Continue beating till fairly stiff.
- Add in sugar, one Tbsp.
- at a time.
- Arrange meringue on pie and bake at 350 degrees for 15 min, or possibly till nicely browned.
