Turkey Oriental Soup Recipe
- 1/2 c. rice, uncooked
- 7 c. turkey or possibly chicken broth
- 2 c. cooked turkey, minced
- 1 c. celery, diagonally sliced
- 2 med. carrots, cut into matchsticks
- 1 (14 ounce.) can fancy mixed Chinese vegetables, liquid removed and rinsed
- 1/2 c. green sliced onions, including tops
- 3 tbsp. soy sauce
- 2 tbsp. water or possibly bouillon
- 1 1/2 teaspoon cornstarch
- Combine rice and broth, bring to a boil and cook 10 min.
- Add in turkey, celery and carrots.
- Simmer for 5 min.
- Stir in the mixed vegetables and green onions.
- Blend soy sauce and bouillon with cornstarch; add in to broth.
- Simmer till soup is clear and slightly thickened; stirring occasionally.
- Makes 6 servings.
