Prawn and Avocado Salad

  1. Peel and devein prawns.
  2. Combine wih spinach, thinly sliced snowpeas, chives and avocado.
  3. Dressing: press the grated ginger between two spoons to extract the juice.
  4. Keep the juice and discard the ginger.
  5. Combine olive oil, lemon juice, sugar, salt and pepper and mix well.
  6. Add ginger juice gradually, to taste.
  7. Add the dressing to the salad.
  8. Serve.
