Double Bran - Multigrain Bread
- 1 12 teaspoons dry yeast
- 1 cup bread flour
- 2 14 cups whole wheat flour
- 1 teaspoon gluten
- 2 tablespoons dry milk
- 2 teaspoons salt
- 2 tablespoons butter, melted
- 2 tablespoons brown sugar
- 12 cup bran flakes
- 13 cup natural bran, toasted
- 1 12 cups water
- Dissolve yeast in water.
- In separate mixing bowl, combine all dry ingredients except flours and salt.
- Add melted butter and yeast/water mixture while mixing on low speed with bread hook.
- Slowly add flours and salt and mix until firm dough forms, you may need to add a little more bread flour if it's too wet.
- Knead into a dough ball, rub with olive oil and place in greased bowl.
- Cover loosely with plastic wrap and dish towel.
- Let raise until doubled.
- Turn onto floured surface and knead.
- Form into a loaf and place in 9x5 loaf pan.
- Let rise until doubled again.
- Bake in 350 degree oven for 30 min.
- Remove from pan and brush top with butter or spray with cooking oil.
