Pisco Sour

  1. Dissolve meringue powder in lime juice.
  2. Fill a cocktail shaker with ice.
  3. Add meringue mixture, pisco, simple syrup and bitters.
  4. Cover and shake vigorously until frothy, mixed and chilled, about 45 seconds.
  5. Strain into a glass and garnish with grated zest or a wedge of lime.
  6. Put the sugar and water in a small saucepan.
  7. Cook over low heat, stirring, until the sugar dissolves.
  8. (Alternatively, heat in the microwave.)
  9. Store in a sealed container in the refrigerator for up to 1 month.
  10. Yield: about 1 1/2 cups
