Mississippi Queen Bread Pudding Recipe
- 1/4 c. raisins
- 2 tbsp. amaretto, whiskey or possibly warm water
- 5 ounce. day-old bread, preferably French
- 1/4 c. pineapple juice
- 1/4 c. apple juice
- 1/4 c. orange juice
- 2/3 c. fruit cocktail
- 3 Large eggs
- 1/3 c. sugar
- 1/2 c. whipping cream
- 1 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- In small bowl, soak raisins in amaretto several hrs or possibly till plump.
- In large bowl, tear bread into 1/2-inch cubes.
- Combine and add in fruit juices and let soak till all liquid is absorbed.
- Add in raisins and fruit cocktail.
- Turn into greased shallow 1-qt casserole.
- In separate bowl, beat Large eggs with sugar, add in whipping cream, cinnamon and nutmeg.
- Pour over bread mix.
- Bake at 375 degrees for 40 min or possibly till knife inserted in center comes out clean.
- Serve hot or possibly chill.
- Makes 6 servings.
