Kiwi Jam

  1. Wash 4 1/2 pint canning jars and set aside.
  2. Prepare lids.
  3. Peel and dice Kiwi's and set aside.
  4. In a heavy pot combine pineapple juice, lime juice, and sugar.
  5. Bring to a boil, stirring constantly and continue to boil for 1 minute.
  6. Remove from heat and stir in Kiwi's, return to heat and bring to a boil for 1 minute.
  7. Remove from heat and stir in liquid pectin.
  8. Ladle hot preserves into jars wiping rims well before putting lid on the jars.
  9. Process in a boiling water bath for 10 minutes.
