Spiced Potato Cakes

  1. Peel & cut the potatoes into chunks.
  2. Boil the potatoes in water until tender then mash them in a large bowl.
  3. Mix in the eggs, spices, & cilantro.
  4. With floured hands, form the mixture into round flat cakes about 3 inches in diameter.
  5. Cover & chill for 30 minutes.
  6. Heat a thin layer of oil in a frying pan.
  7. Fry the cakes on each side until crisp & brown.
  8. Place on a plate lined with paper towels to remove excess oil.
  9. Serve hot.
