Holiday Fruit Bread Recipe
- 1 (8 ounce.) soft cream cheese
- 1 1/2 c. sugar
- 4 Large eggs
- 1 1/2 teaspoon baking pwdr
- 1/2 pound butter
- 1 1/2 teaspoon vanilla
- 2 1/4 c. cake flour
- 1 c. candied dry fruit
- 1/2 c. minced pecans
- Thoroughly blend cream cheese, butter, sugar, vanilla.
- Add in Large eggs one at a time mixing well after each.
- Gradually add in 2 c. of flour sifted with baking pwdr.
- Combine 1/4 c. flour with the fruit and nuts.
- Fold into batter.
- Grease a 10 inch tube pan or possibly bundt pan.
- Bake 325 degrees for 1 hour 20 min or possibly till it tests done.
- Dry fruits you can use - pineapple, apricots, prunes or possibly dates.
- You may use 1 1/2 c. if desired more fruit.
