Sophie's pizza breakfast wrap
- 1 tortilla/fajita wrap
- 1 tbsp tomato paste
- 2 eggs
- 1/3 cup grated cheese (I like a mix of grated and mozzarella)
- 4 slice large pepperoni spices, chopped
- 1 tsp Italian herbs
- 1/2 tbsp hot sauce (or to personal preference)
- Mix together your eggs, tomato paste, herbs, chopped pepperoni and hot sauce.
- Drop into a hot pan and cook for 4-5 minutes, it until it looks cooked through.
- I like it when some of it gets a dark golden colour.
- Turn off the heat, and mix in your cheese until melted.
- Put your egg mixture into your wrap and enjoy!
