No Egg, Milk, or Flour! Rice Flour Banana Cake
- 150 grams Rice flour
- 2 bananas Banana
- 50 grams Sugar (or raw cane sugar)
- 40 grams Olive oil
- 150 ml Soy milk
- 7 grams Baking powder
- Put 1.5 of the bananas in a bowl and mash.
- The leftover half of a banana will be used for decoration, so cut it into slices.
- Preheat your oven to 180C.
- Add the sugar to the mashed bananas and mix well.
- Add in the baking powder and mix well.
- Then add in the olive oil and mix once more.
- Next, add in the rice flour and soy milk and mix well.
- Pour the dough into a parchment lined pan and top with the thinly sliced bananas.
- Bake at 180C for 45 minutes.
- When you pierce it with a bamboo skewer and it comes out clean, it's done.
- If you want it lighter, cover it with aluminum foil and bake for 5-10 minutes.
