Italian Tomato Sauce
- 2 tablespoons olive oil or 2 tablespoons vegetable oil
- 1 large onion, chopped (about 1 cup)
- 1 medium green bell pepper, chopped (1/2 cup)
- 2 large garlic cloves, finely chopped
- 32 ounces whole tomatoes, undrained
- 16 ounces tomato sauce
- 2 tablespoons fresh basil or 2 teaspoons dried basil leaves
- 1 tablespoon fresh oregano or 1 teaspoon dried oregano leaves
- 12 teaspoon salt
- 12 teaspoon fennel seed
- 14 teaspoon pepper
- .Heat oil in 3-quart saucepan over medium heat.
- Cook onion, bell pepper, and garlic in oil about 2 minutes, stirring occasionally.
- Stir in remaining ingredients, breaking up tomatoes.
- Heat to boiling and reduce heat to low.
- Cover and simmer 45 minutes.
- Serve with meat loaf, meatballs, or over hot cooked pasta.
