Chicken Enchiladas
- 1 whole Small Onion
- 1- 1/2 cup Cooked, Shredded Chicken Breast
- 3/4 cups Shredded Cheddar Cheese, Divided
- 3/4 cups Salsa
- 1 Tablespoon Green Chiles
- 8 ounces, weight Cream Cheese
- 1 jar (about 11 Oz. Jar) Green Enchilada Sauce
- Preheat oven to 350 degrees.
- Heat some oil in a large skillet.
- Add onion; cook over medium-high heat for 4-5 minutes or until tender.
- Add chicken, 1/2 cup of cheddar cheese, salsa, green chiles and cream cheese.
- Heat and stir for 2-3 minutes until cheeses are melted.
- Spoon about 1/3 cup of the chicken mixture down the center of each tortilla; fold and place fold side down in a 9x13 baking dish.
- Drizzle the jar of green enchilada sauce on top of the tortillas.
- Sprinkle remaining cheddar cheese over green sauce.
- Cover dish with foil and bake for 15-20 minutes or until heated through and cheese on top is melted.
- Makes 4 servings if youre famished, 6 servings if youre just hungry like normal.
- Make sure you have sides of salsa and sour cream to top with.
