Chicken Enchiladas

  1. Preheat oven to 350 degrees.
  2. Heat some oil in a large skillet.
  3. Add onion; cook over medium-high heat for 4-5 minutes or until tender.
  4. Add chicken, 1/2 cup of cheddar cheese, salsa, green chiles and cream cheese.
  5. Heat and stir for 2-3 minutes until cheeses are melted.
  6. Spoon about 1/3 cup of the chicken mixture down the center of each tortilla; fold and place fold side down in a 9x13 baking dish.
  7. Drizzle the jar of green enchilada sauce on top of the tortillas.
  8. Sprinkle remaining cheddar cheese over green sauce.
  9. Cover dish with foil and bake for 15-20 minutes or until heated through and cheese on top is melted.
  10. Makes 4 servings if youre famished, 6 servings if youre just hungry like normal.
  11. Make sure you have sides of salsa and sour cream to top with.
