Greek Lemon Soup Recipe

• 4 c. chicken broth
• 1/4 c. uncooked long-grain rice
• 2 Large eggs, well beaten
• Juice of 1 med. lemon
• 1 tbsp. minced fresh parsley
• Freshly grnd pepper
• Salt to taste
• Thin lemon slices

1. Serves 4 to 6.
