Oatmeal & Trail Mix Cookies
- 1/2 cup canola oil
- 3/4 cup brown sugar blend sugar replacement
- 1 egg
- 1 tsp. vanilla
- 1 cup whole wheat flour
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 cup large flake rolled oats
- 1/2 cup Back to Nature Trail Mix - Raisins, Almonds, Pumpkin Seeds, Pecans and Apricots, chopped
- Heat oven to 350 degrees F.
- Beat oil and brown sugar replacement in large bowl with mixer until blended.
- Add egg and vanilla; mix well.
- Combine flour, baking soda and salt.
- Add to egg mixture; beat until blended.
- Stir in remaining ingredients.
- Drop teaspoonfuls of dough, 1 inch apart, on baking sheets.
- Bake 10 to 12 min.
- or just until centres are set.
- Cool on baking sheets 3 min.
- Remove to wire racks; cool completely.
