Be Mine Chocolate Cream Cupcakes

  1. Heat oven to 350F Combine all filling ingredients in small bowl.
  2. Beat at medium speed, until well mixed.
  3. Set aside.
  4. Combine 1 3/4 cups sugar and butter in large bowl.
  5. Beat at medium speed, until creamy.
  6. Continue beating; add eggs one at a time, until well mixed.
  7. Add water, melted chocolate and 1 teaspoon vanilla.
  8. Continue beating until well mixed.
  9. (Mixture may look curdled.)
  10. Reduce speed to low; add flour, baking powder, baking soda and salt.
  11. Beat until well mixed.
  12. For each cupcake, spoon 1 rounded tablespoon chocolate mixture into each paper-lined cupcake cup, top with 1 tablespoon cream cheese mixture.
  13. Spoon 1 rounded tablespoon chocolate mixture on top.
  14. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.
  15. Let stand 5 minutes.
  16. Remove from pans.
  17. Cool completely.
  18. Meanwhile, beat whipping cream and powdered sugar in small bowl at high speed, until stiff peaks form.
  19. Gently stir in 1/2 teaspoon vanilla.
  20. Spread about 3 tablespoons frosting onto each cupcake.
  21. Store refrigerated.
