Pasta Amatriciana / Bucatini AllAmatriciana

  1. Heat olive oil over medium heat in a large skillet.
  2. Add chopped bacon, onion, garlic, parsley and crushed red pepper.
  3. Cook for 10 - 15 minutes, stirring often, until onions are soft and bacon is starting to lightly crisp around edges.
  4. Do not drain fat.
  5. Add red wine - stir one minute.
  6. Add tomato sauce.
  7. Stirring constantly, bring to a boil.
  8. Reduce heat to low and simmer sauce for 20 - 25 minutes, stirring often.
  9. Salt and pepper to taste if necessary.
  10. While sauce is going (coordinate times) cook pasta per package instructions in boiling salted water.
  11. Drain, toss with sauce.
  12. Serve with grated Pecorino Romano or cheese of choice.
  13. Enjoy : )
