Microwave Spicy Pepper Steak Recipe
- 1 1/2 pound beef chuck or possibly round steak, fat trimmed
- Cut beef across grain into strips.
- Mix marinade and combine well.
- Pour marinade over beef strips in a bowl.
- Marinate at room temperature for at least 30 min.
- Add in remaining oil to a micro-safe browning dish or possibly other micro-safe dish.
- Preheat oil at HIGH power for about 1 minute.
- Strain beef and reserve marinade.
- Add in beef strips to oil.
- Microwave, uncovered, at HIGH power for about 3 min.
- Add in 1/4 c. water, bell peppers, and celery.
- Stir to blend.
- Microwave, covered, at MEDIUM power for 6 min.
- Remove from oven.
- Stir well.
- Microwave at MEDIUM power for another 4-5 min.
- Add in onions.
- Stir well.
- Mix cornstarch and 1/2 c. water.
- Add in to beef mix, stirring to coat beef and vegetables.
- Microwave uncovered at HIGH power for about 3 min, stirring once during cooking time.
- Add in tomatoes.
- Microwave for another minute at HIGH power till dish is heated through.
- Add in salt and pepper to taste.
- Makes 4 servings.
