Quinoa with Broccoli, Cheese & Bacon

  1. Heat oil in large saucepan on medium heat.
  2. Add onions; cook and stir 4 min.
  3. or until crisp-tender.
  4. Add quinoa; cook and stir 1 min.
  5. Add broth; stir.
  6. Bring to boil; cover.
  7. Simmer on medium-low heat 18 min.
  8. or until quinoa is tender.
  9. Stir in broccoli; simmer, covered, 2 to 3 min.
  10. or until broth is absorbed and broccoli is crisp-tender.
  11. Top with cheese and bacon.
