Chicken in Cilantro Sauce
- 2 bell peppers
- 3 tablespoons oil
- 6 boneless skinless chicken breasts (1 1/2 lbs total)
- 2 cups tomato sauce (2 8oz cans)
- 12 cup fresh cilantro
- 12 cup onion, chopped coarsely
- 1 medium garlic
- 14 teaspoon salt
- Slice peppers cross-wise into rings.
- Lightly saute in oil in large skillet.
- Remove peppers, drain on paper towels.
- Brown chicken on both sides in remaining oil in skillet.
- Place remaining ingredients in blender, blend until smooth.
- Pour over chicken in skillet.
- Heat until boiling.
- Reduce heat.
- Boil gently, approx 5 minutes or until chicken is tender.
- Place chicken on serving platter.
- Arrange peppers on top.
- Serve with remaining sauce.
