Easy Potato Soup
- 4 large potatoes, diced
- 2 -3 large carrots, sliced
- 2 -3 large celery ribs, sliced
- 1 large yellow onion, diced
- vegetable stock
- 8 ounces low-fat cream cheese
- salt and pepper
- Chop all veggies.
- Put veggie in stock pot with just enough broth to cover the vegitables.
- Bring to boil and cook until potatoes are soft, about 25 minutes.
- Stir in Cream cheese.
- Salt and pepper to taste.
