Grandmother's Potato Candy Recipe

  1. Boil potato with peeling on.
  2. Peel potato and mash well.
  3. Add in healthy pinch of salt.
  4. Add in powdered sugar a little at a time, using as much as it takes to make a stiff dough.
  5. Pat out flat (1/4 inch thick) on waxed paper.
  6. Spread a thin layer of peanut butter on dough.
  7. Starting with 1 edge, roll into a roll.
  8. Keep wrapped with waxed paper in a cold place till hard.
  9. Slice into 1/4 inch pcs to serve.
  10. Slice off only as much as will be immediately used as it will dry out and harden.
