Grandmother's Potato Candy Recipe
- 1 med. to sm. Irish potato
- Healthy pinch of salt
- 1-1 1/2 boxes powdered sugar
- Creamy peanut butter
- Boil potato with peeling on.
- Peel potato and mash well.
- Add in healthy pinch of salt.
- Add in powdered sugar a little at a time, using as much as it takes to make a stiff dough.
- Pat out flat (1/4 inch thick) on waxed paper.
- Spread a thin layer of peanut butter on dough.
- Starting with 1 edge, roll into a roll.
- Keep wrapped with waxed paper in a cold place till hard.
- Slice into 1/4 inch pcs to serve.
- Slice off only as much as will be immediately used as it will dry out and harden.
