Vegetarian southern squash
- 8 cup sliced yellow crook neck squash
- 4 cup caramelized onions see attached recipe
- 1/2 cup Manischewitz concord grape wine or grape juice
- 1/4 cup water
- 2 tbsp cornstarch
- 1 stick margarine
- 1 tsp seasoned salt
- In a pan with caramelized onions add stick of margarine, and melt.
- Add squash stir well when tender add wine or grape juice.
- Add seasoned salt.
- Cook 7 minutes this allows alcohol to cook off.
- Mix water and cornstarch.
- Add to squash to tighten up the squash.
- Let sit.
- After 5 minutes, serve hope you enjoy
