Homemade Chicken Soup
- 1 small roasting chicken, Whole
- 1 small onion
- 12 ounces diced tomatoes
- 1 cup carrot
- 3 tablespoons chicken bouillon (more to taste)
- 1 (8 ounce) box orzo pasta
- Wash chicken and remove bag of parts from cavity.
- Throw them away.
- Wash inside of chicken.
- Put chicken in large pot and cover with water.
- Bring water to boil.
- Turn water down and gently cook for 1 hour - chicken should be falling off the bones.
- Take chicken out of water and allow to cool.
- Add to water: Chopped up onion, Can of diced tomatoes, Chopped carrots, 1 tsp of "Better than Bouillon" (taste to see if more is needed).
- Break up chicken and pull all meat off bones into very small pieces.
- Put chicken pieces back into stock.
- Cook for another hour.
- Cook a box of orzo noodles separately, rinse, add to stock.
- - Orzos are going to grow so don't add TOO much.
- EAT.
