Broiled Heirloom Tomato and Goat Cheese Sandwiches

  2. Slice bread into 1/2 inch slices; toast lightly under broiler.
  3. You can also use a baguette cut in half length-wise and then cut into 4 inch sections.

  5. Cut tomatoes into thick slices.
  6. Mix olive oil and balsamic vinegar in a large bowl; marinate tomato slices in mixture for a few minutes.

  8. In a small bowl, microwave goat cheese for 10 seconds to soften.
  9. Add basil, mayo, garlic powder/salt (or roasted garlic, if you have some!)
  10. and mix to combine.
  11. Spread over toasted bread.

  13. Place tomatoes in a single layer on prepared bread.
  14. Salt and pepper to taste.
  15. Sprinkle parmesan cheese on top.
  16. 5.
  17. Broil for 7-10 minutes or until cheese is browned and tomatoes are softened.
