Broiled Heirloom Tomato and Goat Cheese Sandwiches
- 1 loaf Crusty Bread
- 1 pound Tomatoes
- 2 Tablespoons Olive Oil
- 2 Tablespoons Balsamic Vinegar
- 6 ounces, weight Goat Cheese
- 2 Tablespoons Minced Fresh Basil
- 2 Tablespoons Mayonnaise
- 1 dash Garlic Powder Or Garlic Salt Or Roasted Garlic (optional)
- Salt And Pepper, to taste
- 1/4 cups Shredded Parmesan
- 1.
- Slice bread into 1/2 inch slices; toast lightly under broiler.
- You can also use a baguette cut in half length-wise and then cut into 4 inch sections.

- Cut tomatoes into thick slices.
- Mix olive oil and balsamic vinegar in a large bowl; marinate tomato slices in mixture for a few minutes.

- In a small bowl, microwave goat cheese for 10 seconds to soften.
- Add basil, mayo, garlic powder/salt (or roasted garlic, if you have some!)
- and mix to combine.
- Spread over toasted bread.
- 4.
- Place tomatoes in a single layer on prepared bread.
- Salt and pepper to taste.
- Sprinkle parmesan cheese on top.
- 5.
- Broil for 7-10 minutes or until cheese is browned and tomatoes are softened.
