Tomato and Onion Salad
- 34 cup olive oil
- 14 cup balsamic vinegar or 14 cup white wine vinegar or 14 cup red wine vinegar
- 2 teaspoons minced garlic
- 2 tablespoons chopped fresh parsley, basil
- salt
- fresh black pepper
- 12 lb roma tomato, sliced
- 1 large red onion, peeled and sliced
- In a small mixing bowl, whisk the olive oil, vinegar, garlic, and herbs until incorporated.
- Season the vinaigrette with salt and pepper.
- Place onions and tomatoes in a bowl and pour vinaigrette over and toss.
