Blueberry Soup Recipe
- 1 x 10-oz package frzn blueberries
- 1 c. water
- 1/2 x lemon, sliced
- 1/2 x cinnamon stick
- 1/4 c. granulated sugar
- 1/2 c. half-and-half
- Combine the first 5 ingredients in a saucepan.
- Bring to a boil.
- Reduce heat and simmer for 10 min.
- Remove lemon and cinnamon stick, and puree soup in blender till smooth and velvety.
- Cold, then refrigeratethoroughly in refrigerator at least 5 hrs.
- Just before serving, stir in half-and-half.
