Blackened Alligator

  1. Pound alligator until slightly flattened.
  2. Season using the blackening seasoning.
  3. Cook in hot oil for approximately 4 to 5 minutes, turning constantly after the first minute.
  4. When cooked, drain excess oil.
  5. Serve sliced.
