New York-Style Pizza Dough

  2. Combine flour, sugar, salt and yeast in the bowl of a food processor.
  3. Pulse 3 to 4 times until incorporated.
  4. Add olive oil and both amounts of water.
  5. Run food processor until mixture forms a ball that rides around the bowl above the blade.
  6. This will take about 15 seconds.
  7. Continue processing 15 seconds longer.

  9. Transfer dough ball to a lightly floured surface and knead once or twice by hand until a smooth ball is formed.
  10. Place in a covered container or in a zipper-lock freezer bag.
  11. Place in the refrigerator and allow to rise at least 1 day, and up to 5.
  12. Remove from refrigerator, shape it into a ball, and allow to rest at room temperature for at least 2 hours before baking.

  14. The longer you let it rise the more sourdough flavor it has.

  16. This makes enough dough for a 14 pizza.
