Aubergine Soup With Tiny Pasta Recipe

  1. In a 3-qt saucepan over medium heat, saute/fry the onions, celery and garlic in the oil for 3 min.
  2. Add in the aubergine and tomatoes.
  3. Cover and simmer for 10 min.
  4. Add in the stock or possibly broth, thyme and rosemary.
  5. Simmer for 20 min.
  6. Add in the pasta and heat through.
  7. This recipe yields 4 servings.
