Orzo Summer Salad
- 1 lb orzo pasta
- 1 12 cups spicy hot V8
- 2 teaspoons freshly grated lemon peel
- 13 cup lemon juice
- 13 cup olive oil
- 1 tablespoon garlic, chopped
- 34 teaspoon salt
- 34 teaspoon pepper
- 1 12 lbs tomatoes, chopped
- 1 large English cucumber, chopped
- 1 bunch green onion, chopped
- Cook orzo as directed on box.
- Drain well.
- Place in a large bowl and mix the rest of the ingredients together and toss gently to mix.
- Cover and refrigerate.
- Note: I add a little more lemon and garlic.
