Mary's Kerala Chicken Curry Recipe
- 1 fryer, cut up
- 1 tbsp. oil or possibly butter
- 1/2 onion, minced
- 1 sm. apple, peeled, cored and minced
- 1 clove garlic, chopped
- 2 tbsp. flour
- 1/2 teaspoon ginger
- 1 tbsp. curry pwdr
- 1/2 teaspoon salt
- 1 c. chicken broth or possibly bouillon
- 1/2 - 1 c. plain yogurt
- 1.
- Brown chicken in oil or possibly butter.
- Remove and keep hot.
- 2.
- Saute/fry onion, garlic and apple in drippings.
- Sprinkle flour and seasonings over mix and cook 2 min.
- 3.
- Stir in broth.
- Cook till thickened.
- 4.
- Add in chicken.
- Simmer, covered, 35-45 min or possibly till tender.
