Cranberry Apple Filled Bars
- 1 cup all-purpose flour
- 1 cup uncooked quick cooking oats
- 1/2 cup firmly packed brown sugar
- 1/2 teaspoon baking soda
- 1/2 cup cold Land O Lakes Butter, cut into chunks
- 1 cup sweetened dried cranberries
- 1/2 cup sugar
- 1/4 cup cranberry-apple juice
- 2 medium (2 1/2 cups) apples, peeled, cored, chopped
- 2 tablespoons orange marmalade
- 1 teaspoon cornstarch
- Heat oven to 350F.
- Combine flour, oats, brown sugar and baking soda in bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs.
- Press two-thirds crust mixture evenly onto bottom of lightly greased 11x7-inch glass baking dish.
- Bake 10-15 minutes or until puffed.
- Combine cranberries, sugar, cranberry-apple juice and apples in 2-quart saucepan.
- Cook over medium heat, stirring occasionally, 5-6 minutes or until mixture is thickened.
- Stir together orange marmalade and cornstarch in bowl.
- Gradually stir into hot fruit mixture.
- Continue cooking, stirring occasionally, 1-2 minutes or until mixture boils and is thickened.
- Spread fruit mixture over hot, partially baked crust.
- Sprinkle with reserved crumb mixture.
- Bake 22-25 minutes or until lightly browned.
- Cool completely.
- Cut into bars.
