Fruit Stand Chicken Salad
- 2 cups cubed cooked chicken
- 1 cup chopped celery
- 1 cup seedless grapes, halved
- 4 sm. nectarines, diced
- 1/2 cup mayonnaise
- 2 tbsp. lemon juice
- 2 tbsp. honey-Dijon mustard
- 1 tbsp. Dijon mustard plus
- 1 tbsp. honey
- 1 tbsp. snipped fresh
- frozen chives
- Salt and pepper to taste
- 1 head bibb lettuce, washed and dried
- 1/2 cup lightly toasted sliced almonds
- In a large mixing bowl, combine chicken, celery, grapes and nectarines.
- In a small bowl, combine mayonnaise, lemon juice, mustard, chives and salt and pepper.
- Add dressing to salad and toss lightly.
- Serve on lettuce leaves.
- Sprinkle with toasted almonds.
