Egg Salad
- 8 large eggs
- 13 cup mayonnaise
- 1 small onion
- 2 tablespoons dill relish
- 1 tablespoon yellow mustard
- salt, opional
- pepper, opional
- 8 slices bread
- Hard boil eggs and allow them to cool or even refrigerate the day before.
- Peel and finely chop eggs.
- cut onion in half save half for other recipes.
- finely chop half of the small oinion.
- Place relish, onion, egg, mayonnaise and mustard in a bowl and mix thoroughly.
- serve cold in a salad, on bread, toast, or crackers as desired.
