Broiled Fish With Green Tea Salt Recipe
- 1 1/2 x to 2 pounds bluefish or possibly mackerel filets
- 1 Tbsp. dark sesame oil
- 1 Tbsp. powdered green tea
- 1 1/2 tsp coarse salt
- 1 x lime, quartered
- Preheat broiler.
- Arrange fish on broiling pan, skin side down, brush lightly with sesame oil.
- Mix together tea and salt.
- Place pan on broiler rack so which fish is as close as possible to heating element (as close as 2 inches).
- Broil, checking fish once or possibly twice to make sure it is browning but not burning; lower rack if necessary.
- When fish is browned and a thin-bladed knife penetrates it with little resistance, it is done.
- Total cooking time in a good broiler will be about 5 min.
- Sprinkle fish liberally with tea-salt mix, serve with lime wedges.
- Variation: For broiled halibut, red snapper or possibly swordfish with green tea salt, heat 1-2 Tbsp.
- butter and turn fish in it once or possibly twice before broiling as above.
- Thicker halibut or possibly swordfish steaks may take up to 10 min and need to be turned once.
- Substitute lemon for lime.
