Candy Irish Potatoes

  1. Add the sugar, butter, evaporated milk, cream of tartar and salt in a saucepan over medium heat.
  2. Stir well and bring to a boil.
  3. Cook to the soft ball stage at 234 degrees F (115 degrees C).
  4. When dropped into cold water, a few drops will form a soft ball.
  5. Remove from heat and let cool to room temperature.
  6. Beat in vanilla by a whisk or an electric mixer until creamy and stiff.
  7. Roll into balls and shape like little potatoes.
  8. Roll each ball into cinnamon or cocoa powder to be evenly coated, then press in pieces of chopped nuts to make eyes.
  9. Serve and enjoy!
