Lovely Tuna Noodle Casserole
- 8 ounces noodles, dry (any you like)
- 1 teaspoon canola oil
- 12 cup onion, chopped
- 1 teaspoon garlic, minced
- 6 ounces tuna, drained (or double or triple)
- 1 green pepper, chopped (sometimes I use peas instead)
- 12 cup carrot, chopped
- 14 cup parsley, chopped
- 14 teaspoon paprika
- 12 cup sour cream
- 1 cup plain yogurt
- 12 cup breadcrumbs (flakes, crumbled crackers, etc)
- 14 cup parmesan cheese, grated
- Cook and drain noodles.
- Put oil in a hot skillet over medium high heat.
- Saute onion and garlic to transparent.
- Move to a bowl.
- Add green pepper, carrots, parsley and paprika.
- Set aside.
- Blend yogurt, sour cream and cottage cheese.
- Add noodles and tuna mixture.
- Pour into a 9x11 casserole pan.
- Combine bread crumbs and parmesan cheese and sprinkle on top of casserole.
- Bake for 30-45 minutes or until top is lightly browned.
