Sweet Potato Fritters

  2. Preheat oven to 400 F. Line a baking sheet with parchment paper or spray with cooking spray.

  4. Heat oil in large skillet over medium-high heat.
  5. Saute onion and jalapeno for 3 minutes.
  6. Add garlic powder, salt, black pepper, cumin, and chili powder.
  7. Saute for 30 seconds to 1 minute, until spices are fragrant but not burning.
  8. Add sweet potato and saute 2 minutes more.

  10. Put sweet potato mixture and remaining ingredients in a food processor.
  11. Pulse just until combined.
  12. Divide mixture into equal portions (should make 4-6 fritters), shaping into 4-inch round patties that are about 1/2 inch thick.
  13. Place on prepared baking sheet.

  15. Bake at 400 F for 10-15 minutes or until browned and set in the middle.
  16. Remove from oven and serve with salsa and guacamole.
