Chicken Tortilla Lime Soup

  1. *Bake chicken @ 350 until juices run clear.
  2. Shred, cool, set aside.
  3. *Spray pan with cooking spray.
  4. Saute tortillas until browned, set aside.
  5. *In large pot (medium heat) saute garlic, onion, & jalapeno until onions are clear.
  6. Add roasted Anaheim peppers & 1/8 tsp chili powder.
  7. Until fragrant.

  10. *add stock, chicken, corn, cilantro, and lime juice.
  11. Simmer 5-10 minutes, or until heated threw.
  12. Pour soup in bowls, top with toasted tortillas and cheese.
  13. Still tastes great w/o Anaheim chilies.
  14. really tasty with chopped avocados on top too!
