CurvesTM Cereal Apple-Cran Muffins
- 34 cup sweetened applesauce
- 13 cup nonfat milk (skim)
- 2 tablespoons vegetable oil
- 1 eggs or 14 cup fat-free liquid egg product
- 3 cups curves whole grain crunch cereal, slightly crushed
- 1 14 cups all-purpose flour
- 12 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 34 teaspoon baking soda
- 12 cup dried sweetened cranberries
- 12-1 teaspoon coarse sugar or 12-1 teaspoon granulated sugar
- Heat oven to 400F Place paper baking cup in each of 12 regular-size muffin cups; spray bottoms with cooking spray.
- In large bowl, mix applesauce, milk, oil and egg until blended.
- Stir in remaining ingredients except coarse sugar just until moistened.
- Divide batter evenly among muffin cups.
- Sprinkle with coarse sugar.
- Bake 18 to 22 minutes or until golden brown.
