Pink Elephant Meringues Recipe
- 3 Large eggs
- 1/4 teaspoon cream of tartar
- 3/4 c. sugar
- 1/4 teaspoon red food coloring
- 1 quart. vanilla ice cream
- Heat oven to 275 degrees.
- Cover cookie sheet with heavy brown paper.
- Separate Large eggs, save yolks for later.
- Beat egg whites with sugar, 1 Tbsp.
- at a time.
- Add in food coloring and beat till stiff and glossy.
- Arrange stiff egg whites on 2 cookie sheets in shapes of elephants.
- Leave plenty of room between them and scoop out an indentation in the body for the ice cream.
- Put 1 chocolate chip on the face for an eye.
- Bake at 275 degrees for 45 min.
- Turn off oven and leave them in for 1 hour WITH THE DOOR CLOSED.
- Just before serving, fill each meringue body with a scoop of ice cream.
