Pink Elephant Meringues Recipe

  1. Heat oven to 275 degrees.
  2. Cover cookie sheet with heavy brown paper.
  3. Separate Large eggs, save yolks for later.
  4. Beat egg whites with sugar, 1 Tbsp.
  5. at a time.
  6. Add in food coloring and beat till stiff and glossy.
  7. Arrange stiff egg whites on 2 cookie sheets in shapes of elephants.
  8. Leave plenty of room between them and scoop out an indentation in the body for the ice cream.
  9. Put 1 chocolate chip on the face for an eye.
  10. Bake at 275 degrees for 45 min.
  11. Turn off oven and leave them in for 1 hour WITH THE DOOR CLOSED.
  12. Just before serving, fill each meringue body with a scoop of ice cream.
