Mini Cinnamon Stack Ups
- 4 4-piece frozen low-fat wholewheat waffles
- 1 tablespoon sugar
- 1/4 teaspoon ground cinnamon
- 2 cups fat-free vanilla yogurt
- 2 green kiwifruit, peeled, each cut crosswise into 6 pieces
- 1 star fruit, or carambola, cut crosswise into 8 pieces (optional)
- 1/2 cup fresh blueberries
- 1 cup fresh raspberries or strawberries, hulled
- Toast the waffles.
- Separate each into 4 pieces and arrange on plates.
- Meanwhile, in a small bowl, stir together the sugar and cinnamon.
- To assemble, sprinkle half the cinnamon sugar over the waffles.
- Spoon the yogurt onto each serving.
- Arrange 3 slices kiwifruit, 2 slices star fruit, blueberries, and raspberries on each.
- Sprinkle the remaining cinnamon sugar over all.
