Baked Flounder Creole Recipe
- 3 lb fresh whole Flounder, dressed Salt Pepper
- 1/4 c. (1/2 stick) butter, melted
- 2 Tbsp. butter
- 1/3 c. green pepper strips
- 1/4 c. finely minced onion
- 1 1/2 c. diced tomatoes
- 1/4 c. sliced stuffed green olives
- 1 tsp sugar
- 1/4 tsp salt
- 1 dsh pepper
- Preheat oven to 350 F. Sprinkle Flounder inside and out with salt and pepper.
- Arrange fish skin side down in baking dish; pour 1/4 c. melted butter over fish.
- Bake 25 min.
- In skillet, heat 2 Tbsp.
- butter; add in green pepper and onion and saute/fry till onion is slightly brown.
- Add in tomatoes, olives, sugar, salt and pepper.
- Pour sauce over fish and bake 10 min longer.
