Minted Green Bean Salad

  1. In a medium saucepan, bring the water and sugar to a boil, and cook the green beans 6-10 minutes, or until tender but crisp; drain.
  2. In same pan, heat olive oil.
  3. Add garlic and scallion, and saute briefly until limp, 2-3 minutes.
  4. In a medium bowl, combine green beans, garlic, scallion, and mint.
  5. In a small container with a lid, mix olive oil, cider vinegar, garlic, basil, mustard, salt, and pepper.
  6. Shake until well blended.
  7. Toss into the green bean mixture while hot.
  8. Serve hot, room temperature, or cold.
