Creamy Lemon Coconut Pie
- 1 12 cups sweetened condensed milk
- 12 cup lemon juice
- 1 fresh lemon rind, of grated
- 2 egg yolks
- 1 cup shredded coconut
- 1 8 inch pie crust (vanilla is wonderful)
- 2 egg whites
- 4 tablespoons sugar
- 12 teaspoon vanilla extract
- Beat white until frothy,Gradully add sugar,beating until stiff.
- Add vanilla extract,combine.
- Pile on top of pie.
- Heat oven to 350.
- Combine the first 4 ingredients,mixing well.
- Add 3/4 cup of the coconut,and pour into pie crust.
- Cover layer with the prepared meringue.
- Sprinkle remaining coconut over topping.
- Bake 10-15 minutes.
