Grandma's Oatmeal Cookies
- 1 cup shortening or 1 cup margarine
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 2 tablespoons vanilla
- 1 12 cups flour
- 1 teaspoon salt
- 2 teaspoons baking soda
- 3 cups chopped nuts
- 3 cups quick oats
- 1 cup raisins
- 1 cup shredded coconut, well packed
- Preheat oven to 350 degrees.
- Cream shortening or margarine and sugars.
- Mix in eggs and vanilla.
- Sift flour, salt, and soda, and fold into creamed mixture.
- (I like to plump my raisins before adding them.
- If you do, do not sift the flour.
- ).
- Fold in oats, nuts, raisins, and coconut.
- Drop by spoonful or scoop onto cookie sheet.
- Bake for 8-10 minutes or until golden brown.
