Reduced Fat All-Time Favorite Puff Pudding
- 2 Tbsp. margarine
- 1/2 cup sugar
- 1 tsp. grated lemon zest Safeway 4 ct For $5.00 thru 02/09
- 1 egg yolk
- 2 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- 3 Tbsp. flour
- 1/4 cup wheat and barley cereal nuggets
- 1 cup fat-free milk
- 2 egg whites, stiffly beaten
- Beat margarine, sugar and lemon peel until light and fluffy.
- Blend in egg yolk.
- Stir in lemon juice, flour, cereal and milk.
- (Mixture will look curdled, but this will not affect finished product.)
- Gently stir in beaten egg whites.
- Pour into 1-quart baking dish sprayed with cooking spray.
- Place dish in pan of hot water.
- Bake at 325F for 1 hour or until top is golden brown and pudding begins to pull away from side of dish.
- (Pudding will have cake-like layer on top with custard below.)
- Serve warm.
