Chicken Lettuce Cups
- 1 lb ground chicken
- 14 teaspoon black pepper
- 18 teaspoon salt
- 1 cup sliced red onion
- 12 cup canned artichoke heart, drained, and coursely chopped
- 14 cup diced tomato
- 1 tablespoon chopped fresh oregano
- 1 tablespoon fresh flat-leaf parsley
- 10 green olives, pitted, and chopped
- 12 cup diced fresh mozzarella cheese
- 1 tablespoon fresh lemon juice
- 8 bibb lettuce
- Heat a large nonstick skillet over medium high heat, and coat with cooking spray.
- Add chicken, salt and pepper to pan, cook for 3 minutes stirring to crumble.
- Stir in onion and the next 5 ingredients up to and including olives, cook for 3 minutes or until chicken is done.
- Stir in cheese, and lemon juice.
- Spoon 1/4 mixture into each lettuce leaf.
